Papain is commercially manufactured out of latex extracted from the papaya fruit known as yellow papaya.  It is available in different grades, such as Crude Papain, Flake Papain, Semi Refined Papain powder, Liquid Papain and Ultra Refined Papain powder.

The effectiveness or potency of the enzymes is most usefully expressed in terms of its "activity", which is a measure of its power as catalyst.  This is normally expressed in units of activity, which are defined in terms of the weight of substrate (reactant) transformed or product produced in a given time.

Papain that is used for different chemical reaction, is rated on the basis of its activity, which is a measure of potency of the enzyme.

One of the universally accepted unit of activity for papain is "Tyrosine Unit" (TU)
